It’s the most wonderful time of the year
With the kids jingle belling
And everyone telling you “Be of good cheer”
It’s the most wonderful time of the year

Yes, we agree!

And since Christmas will soon be all around us, why not speed up the calendar and prepare us a nice little something to have for our Parisian pre-Xmas celebrations?

This random thought inspired us to share a simple recipe of a long-time favourite seasonal delight with you.

Mulled wine!

Mulled Wine (Jamie Oliver Style)

What you need:

2 clementines
peel of 1 lemon
peel of 1 lime
250g caster sugar
6 cloves
1 cinnamon stick
3 bay leaves
1 nutmeg
1 vanilla pod, halved
2 star anise
2 bottles of red wine

How to proceed:

Peel your clementines, lemon and lime. Put the sugar in a large saucepan over a medium heat, add the peel and squeeze in the clementine juice.

Add the cloves, cinnamon stick, bay leaves and some grated nutmeg.

Throw in the vanilla and stir in just enough red wine to cover the sugar.

Bring to the boil just after the sugar has completely dissolved into the red wine.

Keep boiling for about 4 to 5 minutes, or until you’ve got a beautiful thick syrup. Then turn the heat down and add your star anise and the rest of the wine. 5 minutes later, when it’s all warm and delicious, ladle it into glasses and serve.
